Coconut couscous salad


yummy healthy couscous salad. Something for when you do not have time to cook anything but want something nutritious with a bit of a island flair heres the recipe the satiate that craving!

ok so this recipe doesnt actually contain any coconut except the coconut oil~ which gives it that tropical flair.... but im pretty sure it would be really good with coconut flakes as well


Coconut couscous salad
ingredients
-1/2 cup fruit and nuts
-1 cup couscous
-2 cups water
-spinache (boiled for 3 minutes and cut up)
- 1 small tomatoe diced
-1 scallion diced
-1/2 tsp salt
-1/4 tsp cumin
-2 tbs coconut oil
-1/2 carrot shredded

prepare all the ingredients
1. cook couscous.
2. mix carrots, salt, scallions, tomatoe, spices, oil, fruit and nuts together.
3. serve and eat!

Young Love

more like toddler sweethearts. So the lifey has her son named matthew <3 but we all call him matty. Luckily for Tara he is just 1 year older than her so they can totally play together! Its the cutest thing ever watching a a lil girl and boy play together!

Unlucky for me he is teaching Tara to talk so she has been a non stop chatterbox at home T.T

Homemade pizza

I found a twist on wholesome healthier version of eating pizza


ingredients:
-small can organic tomatoe paste
-mushrooms
-green and red bell peppers
-fresh mozarella cheese
-feta cheese
-asparagus
-fresh basil leaves
-red onions
-flat out bread

directions
1. lay out the bread in baking pan. i used a cookie tray.
2. spread on tomatoe paste. and then start layering i did it in this order
3. mozzarella , basil, asparagus, bell peppers, feta cheese, red onions, and mushrooms.
4. bake at 350 degrees for 15 minutes.

black bean tuna pasta



Black bean tuna pasta
-black beans
-pasta noodles
-american cheese
-small can tuna

directions:
1. boil 1 cup water. Once boiling throw in 5 tbs black beans. boil for 30 minutes.
2. after 30 minutes add pasta. boil for another 30 minutes
3. add in tuna and boil for 5 minutes.
4. then add in cheese and mix. turn off flame once cheese is completely melted into pasta.
5. serve!

Hiking 8/1/2012

Yes its that time of the week again! HIKING time. Somehow it has turned into hiking and feasting.... its ok though at least we dont feel as guilty for eating so crazy. We decided to shake things up a bit and change our location! We both decided to check out Hollywood mountains! We found runyon canyon loop which is in the hollywood hills and we were able to trek though CRAZY trails. Lucy straight up said we were gonna be climbing up, and OMG she was not freaking kidding... we were like CLIMBING this mountain!!! it was like climbing up a gazillion stairs! But this hike is alot better in a sense that i feel like i got more out of it.

The hike starts out by crazy climbing and just an intense workout, and half way through after the last talll ass climb it just mellows out and goes downhill which is what i personally prefer because i like to get my workout at the beginning and that pace myself and slow my heart rate down a bit so that i can catch a breath for the end.

Where as San anita mountains you are going downhill pretty much the whole beginning of the hike and you have a pretty relaxing waterfall at the end (which you also have the option of bringing a bathing suit too and take a nice cool dip!) But then you have to trek back and that is what i have been calling hell...You are hiking BACK up so by the time you get back to your car you are outta breathe, you dont want to move, your hot and tired, and really sweaty, and when you sit in the car your sitting in butt sweat and stinking up the car....But both hikes have their good attributes!

Top 10 summer 2012

I am the type of person that needs to have her life organized. My house on the other hand.....not so much anymore....On the other hand my LIFE needs to be or else i will go insane in the membrane! So i compiled a list of My top 10 favorite things in LIFE as of summer 2012. here we go.

1. Healthy eating habits.
Recently this has been getting alot of buzz throughout my family. Not good buzz or bad buzz...maybe bad buzz, because some people are starting to think im getting obsessed with healthy eating, and exercise. BUT WHAT THE HECK IS WRONG WITH BEING HEALTHY?! I am not STARVING myself i just am picky of what i put into my body now. I rather feel good and healthy, rather then feel sluggish and guilty for eating that piece of fried chicken.... 








2. PICNICS!
This is my NEW found love! I just thought of this recently because i bought tarables to the park and thought they have some nice GRASS here. lol. So now i am organizing all these picnic parties, get togethers picnic style.  I've been obsessed with this for the past 2 days...So much so that i have been online day and night searching for the PERFECT picnic basket and blankets i want to purchase for future picnics.











3. TV shows
Yeah.....totally bad idea for me to have gotten netflix... I have wasted so much time watching so many TV show series its ridiculous how bad i am.... sometimes Tara will have to ask me to pay attention to her for me to realize how addicting these shows are....Its totally making me have bad mommy habits!
But these are my top favorite shows:

-pretty little liars






4. Hiking
For those that read my blog on a regular basis knows this. I have been going almost every week. Ever since i started i have noticed that i sleep better, feel better, and dont feel so sluggish all the time anymore. Its given me a kick in the ass to wake up and get active and fit.  My hubbs is such a sweetheart too, he noticed that i have been going so often that he bought me a hydration pack!

5. MACAROONS!!!! 
I think macaroons are the best dessert in the WORLD! ok... macaroons, creme brulee, and almond pudding... But macaroons are seriously one of my FAVORITE desserts! they are just so scrumptious, soft, and melt in your mouth delights ever!










6. Floral print.
Its cute, its dainty, its delicate, its innocent. You cant go wrong with floral print this summer. I need to go shopping for more floral print stuff! 






7. Laser hair removal
I am currently on my 4th session for my underarms and 1 session for my bikini area. It makes my life soooo much easier! No more fuss with shaving and waxing. Painful waxing every month...ugh! no more! i was fed up! and this is the best solution EVER!






8. Vegas trips!
I still love my vegas trips whether its spring, summer, winter or fall! even though summer time it gets to be up to 105 degrees out here AT NIGHT its still loads of fun for me. I just need a lil dance floor in my life i guess is all.








9. Exercising 
I know hiking is a form of exercising, but i like ALL types of exercising. This summer i have been more engaged into working out then i have any other year. This summer is by far the most healthiest i have been in years!







10. Last and not least: HAWAIIN POKE!
i should say hawaiin food in general.. but i absolutlely LOVE poke! my go girl introduced it to me since shes really familiar with hawaiin food because of her ex. Im so greatfulllll that she introduced this to me because now i wont rest until i can find poke in the LA region. 
I love it because you can choose however much you want. Its healthy. Its light. and its freaking yummers.
